I had some friends round last night.

I had some friends around last night for a dinner party and I thought as I am a vegan some of you might be interested in just what we do eat, two of my friends were vegetarian and the rest vegan, now then you might or might not know, but all vegetarians can eat vegan food but vegans cant eat vegetarian food as vegetarians include dairy products in their diet.

I started off with my home made tomato and basil soup, that was easy basically I just put a tin of tomatoes to the pot some Salt and pepper,

Basil a clove of garlic and a dash of hot chilli sauce next I sliced an onion

One precooked carrot and a splodge tomato puree for extra depth with some olive oil.

I added enough vegetable stock for the four of us, and cooked it gently until the tomatoes were soft, I then zapped it all, put the mixture through a sieve and heated until it was warm enough to eat, adding some water to get the right consistency.  

I served my soup with some hot home made crusty bread rolls.

For the main course I made chickpea moussaka served with broad beans.

This is how I made it, first I fried some aubergines to those of you in the colonels that’s eggplant, then I added some parboiled potatoes along with some onions and courgettes once again for our friends over the pond that’s what we brits call zucchinis,

I added some garlic and then boiled enough chickpeas to layer the dish, and then I made layers of aubergines, tomatoes and sliced spuds now I covered the whole thing with the cooked chickpeas, and some white sauce.

I baked it in the oven for about 25 minuets and at the last 5 minuets I sprinkled it all with some Vegan cheese, yummy yum.

We finished the meal with rhubarb crumble and vegan cream.

The wine (vegan) flowed free and we all had a great time.

    Sounds good. I’m a vegetarian, but would find being a vegan very difficult. What do you use for a white sauce?
