These are some snacks that my adult children make faces over and say things like “Mom, how can you eat that?” Many of them were developed during the years they were growing up–real food was saved for dinner, after they had come home from school.

Perhaps it was because I grew up on a farm, or maybe because of the poverty years while I was an undergraduate, but I have several favorite snack foods that are not on the normal lists of favorite cuisines:

  1. Peanut butter, mayonnaise and pickle sandwiches. Yep, that’s right! The peanut butter should be the real kind-ground peanuts, nothing else, real mayonnaise and dill pickles.
  2. Mashed bean and mayonnaise sandwich. I got this one from my mother, who loved pinto beans. Put a serving of cooked beans on a plate. Mash them with a fork till the texture resembles refried beans. Spread on bread, add mayo, and a pickle if you have one.
  3. Molasses on white bread. The molasses should be the good, dark blackstrap kind; the bread should be that cheap, library paste/wonderbread kind of bread. Place the bread on a plate, drizzle the molasses over it. Wait a few minutes. The molasses will soak into the bread, and kind of set into a semi-chewy treat.
  4. Bacon grease smeared on home-made bread
  5. Lettuce and mayonnaise sandwiches
  6. Chocolate icing on bread
  7. Kool-aid powder mixed with salt or kool-aid powder mixed with sugar
  8. The hardened cheese that forms on the edges of Velveeta if you don’t put it away properly

All of these snacks can be made quickly, and are inexpensive-a couple of them are even nutritious. If a couple of them make you go “EW!” or even chuckle, I’ll have reached my goal with this article! I’ll even let you in on a little secret: they actually taste good.
